Buckwheat health benefits


Just like quinoa and amaranth, buckwheat is a “fake” cereal. Its grains have a triangular shape and are reddish-green in color. Its nutty flavor makes it especially suitable for savory dishes, for filling crêpes or for soups. Japanese “soba” paste is made of buckwheat.

Buckwheat contains no gluten, regulates the level of sugar in the blood, has a strong warming effect, when metabolized is alkaline, contains a lot of calcium, iron and vitamin B. This special wheat is recommended for anemia or convalescence.

Preparation
1 cup buckwheat
2 cups water
Cooking time: 20 – 25 minutes
