Green mango salad

This recipe is a donation from Kay Abaño, both are from The Philippines. The slightly acid and refreshing salad is perfect for barbecues, fine with fish or meat, easy to prepare and to take away to the beach or outside in the green. You will need unripe mangos and tomatoes, this might sound a little bit strange in the first moment, but it’s digestible!

Ingredients:

1 big or 2 mid size mangos – unripe!

3 – 4 tomatoes – unripe!

1 white onion

1 – 2 Teaspoons of Shrimp paste (Bagoong, better to make it yourself if you can)

1 lime

The shrimps paste is already salty so you don’t need more salt.

Preparation

Peel the mango and cut it into little pieces.

Cut the tomatoes into thin slices and the onion into little squares. Put all together on a plate, add the shrimps paste and mix everything good.
