En la India se conocen m\u00e1s de 50 variedades. Todas tienen un alto contenido en prote\u00ednas y zinc y son un alimento imprescindible para los vegetarianos. Adem\u00e1s son muy econ\u00f3micas e ideales para hacer cremas de verduras, currys, dahl, como relleno de cr\u00eapes,&nbsp; guarnici\u00f3n o para hacer los famosos potajes de invierno de lentejas con patatas y salchicha picante. Las lentejas son m\u00e1s f\u00e1ciles de digerir que las habas o los guisantes.<\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<p><b>Variedades de lentejas, una paleta de colores<\/b><\/p>\n\n\n\n<p>Lentejas rojas: peque\u00f1as, peladas, muy blandasLenetejas Puy: lentejas verdes<\/p>\n\n\n\n<p>Lentejas beluga: negras y peque\u00f1as como el caviar<\/p>\n\n\n\n<p>Lentejas amarillas<\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<p><b>Preparaci\u00f3n<\/b><\/p>\n\n\n\n<p>Poner las lentejas&nbsp; en remojo antes de cocerlas (con las lentejas rojas y amarillas no hace falta). Tirar el agua del remojo despu\u00e9s.<\/p>\n\n\n\n<p>El tiempo de cocci\u00f3n var\u00eda seg\u00fan el tama\u00f1o de la lentejas:<\/p>\n\n\n\n<p>Lentejas rojas y amarillas: aprox.10 minutos<\/p>\n\n\n\n<p>Lentejas Puy: aprox. 20 \u2013 30 minutos<\/p>\n\n\n\n<p>Lentejas m\u00e1s grandes: 50 \u2013 60 minutos<\/p>\n\n\n\n<p>La espuma blanca que se desprende al cocinarlas, se quita con una espumadera.
