Este dal es una combinaci\u00f3n de verduras, proteinas y especias que estimulan la digesti\u00f3n. Ayurveda declara la haba mungo como \u00abla mejor\u00bb de todos los legumbres. El mix de especias se puede adaptar si fuera necesario. Pitta no deber\u00eda comer demasiado picante y puede anadir mas cardamomo, gengibre fresco y cilantro. Kapha escoge la leche de coco menos densa y con menos grasa y puede echar algo m\u00e1s de la pimienta cayenne.<\/p>\n<p><strong>Ingredientes para 4 personas<\/strong><\/p>\n<p>150 g habas mungo amarillo<\/p>\n<p>1 cebolla, cortada en trozos pequenos<\/p>\n<p>1 diente de ajo, cortado fino<\/p>\n<p>1 trozo de gengibre fresco, recien rallado, de 4 -5 cm<\/p>\n<p>1 calabacin pequeno<\/p>\n<p>3 &#8211; 4 zanahorias<\/p>\n<p>1 lata de leche de coco pequena (200g) o si tienes la pulpa de medio coco natural o 200 ml de leche coco\/arroz<\/p>\n<p>1\/2 cucharadita de semillas de mostaza negras<\/p>\n<p>3\/4 cucharadita de curcuma molido<\/p>\n<p>1\/2 cucharadita de cumino molido<\/p>\n<p>1\/2 cucharadita de cilantro molido<\/p>\n<p>1 pizca de cardamomo molido<\/p>\n<p>3 cucharas de aceite de colza o aceite de oliva<\/p>\n<p>500 ml agua caliente<\/p>\n<p>sal, pimienta<\/p>\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n<p>Lavar la verdura, pelarla y cortarla en trozos pequenos. Lavar las habas mungo amarillos en un colador bajo agua corriente hasta que el agua quede claro. Poner al lado.<\/p>\n<p>En una olla m\u00e1s pequena sin aceite tostar las semillas de cumin y cilantro hasta que queden dorados y desprendan un buen olor durante 2 &#8211; 3 minutos. Dejarlos enfriar y molerlos.<\/p>\n<p>Calentar en una olla m\u00e1s grande a medio fuego el aceite y a\u00f1adir las semillas de mostaza cuando el aceite este caliente. Las semillas deben \u00abpop up\u00bb. Cuando empiezen a saltar a\u00f1adir la cebolla cortada, remover y asar 6 &#8211; 8 minutos, sin que se quemen. Ahora a\u00f1adir el ajo y el gengibre rallado y asar 2 &#8211; 3 minutos m\u00e1s. A\u00f1adir ahora todas las especias a la olla grande y remover bien durante un minuto: c\u00farcuma, cumino, cilantro y cardamomo.<\/p>\n<p>Echa las habas amarillas lavadas a la olla, removerlo todo y tostarlo 1 minuto.<\/p>\n<p>A\u00f1adir la verdura cortada, salar ligeramente y rellenar la olla con el agua caliente. La verdura debe estar totalmente cubierta de agua. Poner la tapa y dejar cocinar a fuego lento durante 25 &#8211; 30 minutos. Al final a\u00f1adir la leche de coco.<\/p>\n<p>Sacar la olla del fuego y hacer pur\u00e9 con un mini beamer. Cuidado, el dal esta muy caliente y puede salpicar un poco. Adem\u00e1s la curcuma lo ti\u00f1e todo&#8230;sazonar con sal y pimienta, probar la consistencia, quizas hace falta un poco m\u00e1s de agua caliente. O si lo prefieres un poco picante echa un poco de pimienta cayenne.
