Con una salsa bien cremosa a base de aguacate y nueces cashew, llevan estos eggs benedict un abrigo de grasas sanas. Y reserva tus charlas importantes para m\u00e1s tarde, porque ser\u00eda una pena interrumpir este gozo. Escalfar los huevos es m\u00e1s facil de lo que piensas. La salsa de aguacate se hace en un santi amen en el mixer. Solo las nueves cashew deben estar en remojo durante minimo 2 horas, mejor durante la noche anterior. El resultado es magn\u00edfico, te encantar\u00e1.<\/p>\n\n\n\n<p><strong>Ingredientes<\/strong><\/p>\n\n\n\n<p>2 huevos <strong>muy<\/strong> frescos, tama\u00f1o medio. (Es importante que sean frescos, para que la clara del huevo se contraiga. Si no son frescos, mejor utilizarlos para huevos revueltos!)<\/p>\n\n\n\n<p>1 panecillo suave redondo para tostar<\/p>\n\n\n\n<p>una mano peque\u00f1a de nueces cashew<\/p>\n\n\n\n<p>una mano de rucola<\/p>\n\n\n\n<p>1 aguacate maduro<\/p>\n\n\n\n<p>zumo de 1\/2 lim\u00f3n<\/p>\n\n\n\n<p>1\/2 cucharadita de sal<\/p>\n\n\n\n<p>cilantro fresco o cebollino cortado para decorar<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n\n\n\n<p>Poner las nueces cashew como minimo dos horas en remojo en agua caliente, mejor la noche anterior. As\u00ed la salsa sale lisa como tu crema de cara. Ahora sacar las nueces del agua y ponerlas con sal en un bol y hacer un pur\u00e9 muy fino con un minibeamer (mixer). A\u00f1ade medio aguacate y el zumo de lim\u00f3n y vuelve a mezclarlo con el mixer hasta obtener una salsa muy cremosa. A\u00f1adir un poquito de agua si la consistencia lo requiere. La salsa deber ser cremosa y \u00abfluir\u00bb por los huevos. Poner la salsa al lado.<\/p>\n\n\n\n<p>Poner una olla grande con agua a hervir. Mientras tanto, cortar el panecillo en dos partes y tostarlos. Cortar el medio aguacate restante en rodajas finas, salpicar con un poco de zumo de lim\u00f3n. Colocar las rodajas de aguacate encima de los panecillos tostados y poner encima hojas de rucola lavadas.<\/p>\n\n\n\n<p>Cuando el agua este hirviendo, baja un poco la temperatura. Verter un chorro de vinagre en el agua. Con una espumadera o una cuchara grande mover el agua en circulos grandes, para que se forme en medio un remolino. Abrir los huevos por separado en un plato peque\u00f1o o una taza y verterlo desde all\u00ed en el agua moviendose con cuidado.<\/p>\n\n\n\n<p>En 2,5 a 3 minutos los huevos estan listos. Sacarlos con cautela con una espumadera. Dejar escurrir todo el agua y colocar los huevos en los dos panes preparados. Verter por encima la salsa de aguacate, decorar con cilantro fresco y disfrutar mientras est\u00e9 calentito! Si te gusta el queso o el bacon, eres libre de encontrar tu versi\u00f3n preferida. El d\u00eda no podr\u00eda empezar mejor.
