Sorprendentes por su color, naturales en su sabor. Son un desayuno excellente, con queso halloumi, o como acompa\u00f1ante de una comida ligera con una ensalada o pescado a la plancha. La receta viene de Yotam Ottolenghi y su libro \u00abEl Gourmet Vegetariano\u00bb. La mantequilla de lima es un extra delicioso, para los ni\u00f1os creo que ni hace falta; comer\u00e1n los pancakes sin nada m\u00e1s. Puros.<\/p>\n\n\n\n<p><strong>Ingredientes para 3 &#8211; 4 personas<\/strong><\/p>\n\n\n\n<p><strong>Para los pancakes<\/strong><\/p>\n\n\n\n<p>250 g de espinacas lavadas<\/p>\n\n\n\n<p>110 g harina<\/p>\n\n\n\n<p>1 cucharada de levadura en polvo<\/p>\n\n\n\n<p>1 huevo<\/p>\n\n\n\n<p>50 g de mantequilla, derritada<\/p>\n\n\n\n<p>1\/2 cucharadita de sal<\/p>\n\n\n\n<p>1 cucharadita de cumino molido<\/p>\n\n\n\n<p>150 ml de leche<\/p>\n\n\n\n<p>6 cebolletas \/ ajos tiernos, cortados en tiras finas<\/p>\n\n\n\n<p>2 chiles verdes, picados finos<\/p>\n\n\n\n<p>aceite de oliva para asar<\/p>\n\n\n\n<p><strong>Para la mantequilla de lima<\/strong><\/p>\n\n\n\n<p>100 g mantequilla a temperatura ambiente<\/p>\n\n\n\n<p>1 lima, la piel rallada<\/p>\n\n\n\n<p>1 1\/2 cucharaditas de zumo de lima<\/p>\n\n\n\n<p>1\/4 cucharadita de sal<\/p>\n\n\n\n<p>1\/2 cucharadita de pimienta blanca molida<\/p>\n\n\n\n<p>1 cucharada de cilantro fresco<\/p>\n\n\n\n<p>1\/2 diente de ajo, picado<\/p>\n\n\n\n<p>1\/4 cucharadita de chile en tiras muy finas<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n\n\n\n<p>Primero la mantequilla de lima: poner la mantequilla en un bol y trabajarla con una cuchara hasta que est\u00e9 blanda y cremosa. A\u00f1adir todos los dem\u00e1s ingredientes y mezclarlos. Verter la mantequilla sobre film transparente, formar una salchicha, enrollarla y cerrar los dos fines enroscandolos. Poner en el frigo hasta que este firme.<\/p>\n\n\n\n<p>Lavar las espinacas y colocarlas en una olla, verter agua hirviendo encima, esperar 1 minuto, pasar las espinacas por un colador, dejar enfriarlas y exprimir todo el l\u00edquido con las manos. Cortar en trozitos y guardar.<\/p>\n\n\n\n<p>Para la masa de los pancakes: mezclar en un bol grande la harina, la levadura, la sal, el huevo, la mantequilla derritada, el cumino y la leche hasta obtener und masa sin grumos. A\u00f1adir las cebollas, el chile y las espinacas y remover con un tenedor.<\/p>\n\n\n\n<p>Calentar a medio fuego un chorro de aceite de oliva en una sart\u00e9n grande y hacer con cada pancake: pon 2 cucharadas de la masa para cada pancake en la sart\u00e9n. Deben tener unos 7 cm de ancho y 1 cm de alto. Asarlos 2 minutos de cada lado, hasta que esten dorados-verdes. Sacarlos y colocarlos en un plato encima de papel de cocina (cuidado que no se peguen) y cubrilos con un pa\u00f1uelo. Proceder as\u00ed con todos los pancakes. Servir con la mantequilla de lima, el cilantro picado y con queso halloumi o una ensalada!
