Servidos con hummus, un dip de yogur, chutney o aoli gustar\u00e1n a toda la familia. Se pueden usar zanahorias, remolacha, calabaza, boniatos, ra\u00edz de perejil, pero imprescindibles son calabacines &#8211; les dan jugosidad. El Ayurveda considera calabacines un alimento sattvico. Estos patties son aptos para los tres doshas.<\/p>\n\n\n\n<p><strong>Ingredientes para 2 personas<\/strong> (8 patties)<\/p>\n\n\n\n<p>250 g de calabacin<\/p>\n\n\n\n<p>1 ra\u00edz de perejil o 2 zanahorias medianos<\/p>\n\n\n\n<p>60 g &#8211; 80 g de harina de garbanzo o harina normal. Alternativa: 1 huevo y 2 cucharadas de almid\u00f3n de ma\u00edz<\/p>\n\n\n\n<p>1 cucharadita de sal<\/p>\n\n\n\n<p>1 pisca de chile en polvo o medio chile fresco, picado<\/p>\n\n\n\n<p>2 cucharadas de migas de pan gruesos (Panko)<\/p>\n\n\n\n<p>3 cm de gengibre fresco rallado<\/p>\n\n\n\n<p>1 poco de zumo de lim\u00f3n \/ piel de lim\u00f3n rallado<\/p>\n\n\n\n<p><strong>Toque indio:<\/strong> curry en polvo, curcuma, anjoli<\/p>\n\n\n\n<p><strong>Toque asiatico:<\/strong> salsa de soja (shoyu), shitake, semillas de s\u00e9samo, aceite de s\u00e9samo tostado, pasta de miso, piel de lima rallada, cilantro fresco<\/p>\n\n\n\n<p><strong>Extras:<\/strong> cebolla rallada, cebolla tierna, ajo picado, hierbas frescas como albahaca, cilantro, perejil, nueces picados<\/p>\n\n\n\n<p>Ghee, aceite de oliva u otro aceite vegetal para fre\u00edrlos. Consejo: con dos lonchas de bacon (ya no es veggie, pero muy rico) a\u00f1adiendo al aceite, queda genial. Cuando la patties estan hechas, el bacon es super crujiente y da un saborazo a los patties.<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n\n\n\n<p>Lavar los calabacines y rallar. Ponerlos en un bol y salar ligeramente. Dejar reposar unos 10 minutos. Apretar cuidadosamente los calabacines rallados con las manos y escurrir l\u00edquido sobrante, sin aplastarlos! Quitar l\u00edquido, pero no dejarlos secos del todo. Pelar la ra\u00edz de perejil o la zanahorias, rallarlos y juntar con los calabacines. Poner al lado.<\/p>\n\n\n\n<p>Meter la verdura, el gengibre, las especies y la harina en otro bol y mezclar bien con las manos. Dejar reposar m\u00ednimo 15 minutos. Si utilizas un huevo, deja que al almid\u00f3n de ma\u00edz se mezcle bien con las verduras antes de a\u00f1adir el huevo.<\/p>\n\n\n\n<p>Calentar aceite o ghee en una sart\u00e9n y meter 3 o 4 patties. Espera hasta que la sart\u00e9n este bien calentita sin quemar, fuego medio-medio\/alto. Sacar una cuchara por pattie de la masa de verduras, meterla en la sart\u00e9n y aplastarla un poco para que tenga la misma altura. Dorar por los dos lados unos 4 &#8211; 5 minutos. No darle muchas vueltas al pattie, mejor esperar hasta que se doren bien por un lado, despu\u00e9s el siguiente lado.<\/p>\n\n\n\n<p>Servir con una ensalada, pan y un dip que te guste! Buen\u00edsimo y creativo a la vez.
