El tipo de pasta lo eliges seg\u00fan tu cappacidad digestiva. Los tipos Vata no deber\u00edan comer la \u00abpesada\u00bb pasta integral, en cambio los tipos Pitta estar\u00e1n muy contentos de tener algo en la boca para masticar bien. El tipo de pesto tambi\u00e9n es tu selecci\u00f3n.<\/p>\n\n\n\n<p>Hay versionen veganas sin queso (el Ayurveda considera el queso maduro dificil de digerir) &#8211; con rucola, semillas de girasol o de calabaza, lim\u00f3n, hierbas frescas &#8211; o la versi\u00f3n cl\u00e1sica de Italia con aceite de oliva, parmesano, albahaca y pi\u00f1ones (o almendras). A mi me encanta la versi\u00f3n cl\u00e1sica. Y como nuestro fuego digestivo, agni, es m\u00e1s activo al mediod\u00eda, lo como a la hora de comer en vez de muy tarde por la noche. Albahaca es considerado una hierba sattvica. Y s\u00ed adem\u00e1s le pones mucho cari\u00f1o, te sentir\u00e1 bien.<\/p>\n\n\n\n<p>Pesto para 3 personas<\/p>\n\n\n\n<p>2 manojos albahaca muy fresca (40 g)<\/p>\n\n\n\n<p>1 pisca de sal<\/p>\n\n\n\n<p>1\/2 diente de ajo<\/p>\n\n\n\n<p>20 g de pi\u00f1ones o almendras o &#8230;<\/p>\n\n\n\n<p>60 g de parmesano rallado o pecorino<\/p>\n\n\n\n<p>aprox 200 ml de aceite de oliva suave<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n<\/strong><\/p>\n\n\n\n<p>No lavar la albahaca! Solamente quitar las hojas de los tallos.<\/p>\n\n\n\n<p>La mejor manera de hacer un pesto es hacerlo en un mortero. Quedar\u00e1 m\u00e1s \u00abcrunchy\u00bb. En un mixer saldr\u00e1 una masa m\u00e1s fina y m\u00e1s homogena que tambi\u00e9n esta bien.<\/p>\n\n\n\n<p>Poner los pi\u00f1ones con el ajo y una pisca de sal, mezclar brevemente. A\u00f1adir la albahaca, mezclar, a\u00f1adir el aceite, mezclar brevemente y alfinal a\u00f1adir el queso rallado. Mezclar brevemente y si te gusta darle un toque acido echa un poquito de zumo de lim\u00f3n. Listo!<\/p>\n\n\n\n<p>Consejo: para que la pasta y el pesto no esten pegajosos, pon la cantidad de pesto que necesitas en una sart\u00e9n calentada, a\u00f1ade 1 o 2 cucharadas de agua de cocci\u00f3n de la pasta y cuando la pasta est\u00e9 aldente, a\u00f1ade para poco tiempo la pasta a la sart\u00e9n y remuevo todo.
