Green pancakes with lime butter (and an egg) are a super light green fluffy surprising experience on your plate and in your mouth. With a complete natural taste. Great for breakfast, or with halloumi cheese or as a side dish to grilled meat or a mixed salad. The recipe comes from Yotam Ottolenghi and his book “El Gourmet Vegetariano”. The lime butter on top is a “clou” but I´m sure your children with love the green pancakes pure, just as they are.

Ingredients for 3 – 4 persons

250 g spinach, cleaned

110 g flour

1 TS dry yeast

1 egg

50 g melted butter

1/2 TS salt

1 TS cumin, grinded

150 ml milk

6 spring onions, cut in fine slices

olive oil

For the lime butter

100 g butter, room temperature

1 lime, skin rubbed

1 1/2 TS lime juice

1/4 TS salt

1/2 TS white pepper

1 SS fresh chopped cilantro

1/2 garlic clove

1/4 TS chili in fine slices (optional with kids)


First the lemon butter: put the butter in a bowl and work her until she gets soft and creamy. Add all ohter ingredients and mix it well. Pour the butter onto a cling film, roll it up to a saucage form and wrap the ends to close the film. Cool it in the fridge until she is firm.

Wash the spinach, put it in a pot and pour boiling water over it for 2 minutes. Take the spinach out, let it cool down and squeeze it with your hands until all water is out. Cut it in pieces and put it aside.

For the pancake dough: mix in a big bowl the flour, the dry yeast, the egg, the melted butter, salt, cumin and the milk – until you get a dough without clusters. Than add the spinach, onions and chilis and stir it with a fork.

Heat in a pan the olive oil on medium fire. Now proceed in this way for each pancake: take 2 SS dough for one pancake, put it in the pan, press it slightly down. The size should be 7 cm whide and 1 cm high. Roast it from both sides for 2 minutes until it gets green-golden. Take the pancakes oout and put them on plate covered with kitchen paper to soak the resting fat. (Watch out that they don´t get sticked). Do the same with all pancakes. Serve it with the lime butter, a salad or a dish you choose. Enjoy your green pancakes with lime butter and eat them soon.
