Leftover coco mango curry: sunday evening. Only leftovers in the fridge. What can I do with 2 hands of brussels sprouts, 1 yam and an ripe mango? Right: a veggie curry! The best option to use the leftovers and prepare a delicious meal.

You need

1 onion

2 garlic cloves

5 cm fresh ginger

1 red chili, hot

300ml coconut milk

300ml vegetable stock

Preparation

Chop the onions, garlic, ginger and the chili. Put it into a pan with a bit of coconut oil and steam it by low heat for 5 minutes.

Meanwhile grab a little pot and roast in there – without any fat – these spices:

1 teaspoon cilantro seeds

1 ts cumin seeds

1 ts fenogreek seeds

1 ts turmeric ground

When they start springing out of the pot, move the pot away from heat and grind them in a mortar. Now add the species to the onions.

Add the clean and quaterd brussels sprouts, add the yam, peeled and cut in cubes, put more heat on and steam it all for 3 minutes. Now put the coconut milk and the veggie stock in the pot, cook it for 5 more minutes, add the peeled and cut mango. Let it all steam for 10 more minutes.
