Sweet potatoes raw salad
Sweet potatoes raw salad is a marinated sweeter and softer variation of the carrot salad from your childhood. Seasoned with fresh herbs, lime juice and sesam seeds, this salad becomes a great summer colleague to grilles veggies or fish/meat. And it brings a little bit more of “juice” onto the table even in colder months. It is one of my favourit-standard salads! And easy to store, because a sweet potatoe doesn´t get “bad” so fast like a green salad.
1/2 sweet potato per person. The quantity will shrink a bit after the marinating. Here the recipe for 2 persons:
Ingredients
1 big sweet poatato
juice from 1/2 lime (or lemon)
1 pinch of salt
1/2 TS cane sugar
fresh grinded ginger, a bit
olive oil
cilantro leaves fresh, chopped
1 TS roasted sesam seeds
Preparation
Peel the sweet potatoes und cut them in fine slices. Then cut them again in very fine slices. Or use a Thai cutter than you´ll get in a few seconds “julienne” sticks in the right size.
Put the sticks in a bowl, season them with salt and sugar and a bit of olive oil. Mix it well and let it marinate for 10 minutes. Then add the lime juice, the grinded ginger, the sesam seeds and the cilantro. It´s fantastic and you´ll make it a standard in your house. I promise!
