Eggs Benedict are delicious poached eggs on warm tosted soft bread (rolls). The creamy sauce made out of avocado and cashew nuts is like a coat with healthy fats. And put important talks beside for later because it would be a pitty to interrupt this joy. Poaching eggs is much easier than you´ve thought. And the creamy avocado sauce is made in two minutes in the mixer. Onle the cashew nuts must soak for at least 2 hours in water, better the whole night before. The result is unique. You will love this eggs benedict.

Ingredients for 2 poached eggs

2 really fresh eggs (it´s important that they are fresh to contract the egg white. With not fresh eggs, better make an omelette)

1 round bread (roll)

a hand full cashew nuts

a hand full rucola salad

1 ripe avocado

1/2 TS salt

juice from 1/2 lemon

chopped fresh cilantro leaves or spring onions for decoration

Preparation

Soak the cashew nuts for minimum 2 hours in hot water, better the whole night before. Then you´ll get a sauce so smooth like your skin cream. Take the nuts out of the water and give them together with the salt in a mixer. Mix it all finely. Then add the lemon juice and half of the avocado. Mix it all until you´ll get a very smooth creamy sauce. Adjust with a bit of water the consistence of the sauce, it should “run” over the eggs. Put the sauce aside.

Bring water in a big pot to boiling. In the meanwhile cut the bread in two halfs and toast them. Cut the resting avocado hald in fine slices and sprinkle a bit of lemon juice over them. Dispose the avocado slices onto the two bread halfs and put some of the washed rucola above.

When the water is boiling, lower the temperature a bit. Give a shot of vinegar into the water. Stir the water with a big spoon in circles, so that you get in the midlle some kind of swirl. Cut the eggs and pour them seperated onto a small plate and from the plate into the circling water carefully. One after the other.

The eggs are done in 2,5 until 3 minutes! Take them out carefully with a big spoon, let the rest water drip down and lay the eggs onto the breads. Pour the avocado sauce above, sprinkle some chopped cilantro and a bit of salt on top and enjoy. The day couldn´t begin better. I promise you that!
