Pasta salad with mango is a discovery from my sister Antje. She loves to eat a good salad for dinner, if possible, every day another variation. This pasta salad with mango was so great that we´d like to share it with you. It´s from the book “Vegetarisch mit Liebe” from Jeanine Donofrio and it is quiet a summer treasure with a lot of fresh herbs and an asian flavour touch. Give it a try!

Ingredients

Dressing

1 SS Tamari soy sauce

1 garlic clove, peeled, smashed

1 SS fresh juiced lime

1 SS rice vinegar

2 TS cane sugar

Salad

1 firm mango, no too ripe, cut in slices

1 medium size raddish, cut in fine slices

1 carrot, cut in fine slices

120 g vermicelli rice pasta

2 SS roughly chopped mint leaves

2 SS roughly chopped basil leaves

4 SS roughly chopped cilantro

salt

30 g peanuts

lime splits and some sprouts for decoration

Preparation

For the dressing mix all ingredients in a small bowl. Mingle the sliced mango, carrot and raddish in a big bowl. Pour half of the dressing over the veggies and let them marinate for at least 15 minutes.

Meanwhile cook the pasta according to the instructions on the package. When they are ready “scare them” with cold water for some seconds. Than add the pasta to the salad, mix the other half of the dressing under, add the herbs and mix it all good. Season with salt and pepper and decorate the plates with peanuts, sprouts and lime splits. Ready to enjoy this delicious pasta salad with mango! Light and tasty.
